Summary

This accession consists of the publication, "The Mitsitam Cafe Cookbook," which contains recipes based on food served at the Mitsitam Cafe at the National Museum of the American Indian. The Mitsitam Cafe draws upon the tribal culinary traditions from five Native cultural areas in the Americas: Northeast Woodlands and Great Lakes, South America, North Pacific Coast and Columbia Plateau, Mesoamerica (Indians of Central America), and Great Plains. Written by the cafe's executive chef, Richard Hetzler, the recipes have been adapted for home cooks and showcase indigenous American foods.
